Chef Elvis Robles, affectionately known as Chef Earl, embodies resilience and passion in the culinary arts. Hailing from the remote Kinayao in the Philippines, he began his journey as the eldest of nine siblings, driven by a desire to provide for his family. His culinary adventure took flight in Bahrain, where he honed his skills at TGI Fridays, igniting a lifelong love for cooking.
Inspired by childhood moments spent in the kitchen with his mother, Chef Earl's passion flourished through participation in cooking festivals, culminating in a victory with his award-winning corn soup. Returning to the Philippines, he expanded his culinary repertoire in a catering restaurant before rising to Executive Chef at PF Chang’s, where his innovative creations garnered accolades, including recognition from Timeout Bahrain.
Now leading the kitchen at BINONDO in New York City, Chef Earl masterfully blends traditional Filipino flavors with modern techniques, creating dishes that tell a story. His culinary prowess and magnetic personality have made him a beloved figure, offering patrons an authentic yet innovative taste of Filipino heritage.
With 15 years of experience, Chef Earl remains committed to growth and exploration, serving as a culinary ambassador who shares the richness of Filipino cuisine with the world. His journey from a small-town upbringing to a celebrated chef is a powerful testament to the extraordinary achievements that passion and perseverance can bring.

Chef Augelyn (Augee) Francisco, rooted in the mountainous regions of Northern Philippines, has woven her culinary journey into the vibrant culinary landscape of New York City. Growing up on a farm surrounded by livestock and rice fields, she developed a profound respect for seasonal ingredients and the rhythms of nature.
Her culinary adventure began at home, where the Igorot cooking traditions shaped her skills in preparing rustic Filipino dishes like nilaga, kinilaw, and inihaw. Augelyn broadened her culinary horizons through international experiences, integrating diverse spices and techniques inspired by various cultures she encountered.
Beyond her restaurant, Chef Augelyn is a founding member of the Philippines Fest, a lively celebration of Filipino culture and cuisine across the U.S. This initiative highlights the rich culinary heritage of the Philippines while promoting community, cultural exchange, and appreciation for Filipino traditions.
Her commitment to honoring her roots is reflected in the Chinese proverb “饮水思源” (yǐn shuǐ sī yuán), meaning "when drinking water, think of its source." This saying underscores the importance of gratitude towards one’s origins, reminding us to recognize the contributions of those before us.
